The dill in my herb garden reseeds its self every year. I love it. New little dill plants all over.
Finally the dill is ready to be cut an used. So tonight we are having trout with dill sauce. It just so happens we go trout fishing so that is the fish I like to use. But you can use this recipe with any fish.
Place your fish fillets on a buttered piece of heavy duty tin foil. Salt and pepper to taste. Place a few sprigs of dill and a little more butter on your fish. Wrap tightly. Cook on the grill on medium heat. You will have to judge the cooking time. I grill my trout fillets about 4 mins. on each side.
Dill Sauce 1c. mayo juice of one lemon 1 Tbs of chopped fresh dillCut your dill with scissors. Store any extra dill by wrapping it in a damp paper towel, put in a zip lock bag and keep in the fridge.
Enjoy!
Sheila
P.S. I you enjoy cooking with herbs, check out this Dill Dip. Yummy
P.S.S. Grilling fish is fast and easy on a hot summer night. You can always get fancy and serve our fish on a decorative fish platter and garnish with fresh dill flowers.

Dill! Bring it on — I love it. It’s definitely great with fish but I really love it with cucumbers and sour cream!
One of my all time favorite meals is salmon with dill. Yum!

Salmon and dill does sound yummy.
You might also like cucumbers in 1 part white wine vinegar to 2 parts water and lots of dill. Let marinade in the fridge for at least 2 hrs.
